Stas Anastasiades is Essex born and bred of Cypriot parentage. He was at a cross roads in his career when the call came. He had previously worked for the Milsom family but now the choice was simple: do a stint of national service in Cyprus or help the Milsoms set up their new enterprise in Dedham. Before you could say ‘Stas Anastasiades’ he had donned his tin helmet and joined the front line in Dedham. His rank? Associate director. ‘National service would have been much quieter!’ he chuckles, observing as a group of ebullient, fashionably attired girls – a species for which Essex is justifiably renowned – gather for lunch in the ever-busy restaurant.

Paul Milsom’s grandparents had originally purchased the house in 1959 so he had very happy memories of the house and its gardens. When the family parted with it, it became a residential training centre for an insurance company. A few years later the insurers ran for cover: cleverly spotting an opportunity the Milsoms bought it back again. Paul’s wife Geraldine set to work, skilfully creating a very stylish and comfortable hotel. The bedrooms are comfortable and contemporary. The restaurant opens out into the gardens: guests can dine al fresco on the shady terrace next door to the colourful flowerbeds and manicured lawns. If you can judge the quality of an inn by the quality of the cars in its car park, milsoms is already up there with the best.
